Support for SermonSpeaker 5.x is in bugfix mode only, the same as it is for Joomla 3.10.
I will not add any new features to this releases.
Please upgrade to SermonSpeaker 6.x and Joomla 4.x, which is better anyway.

What creates the series.zip files? I find I am seeing a lot of them and they are expanding my disk usage.

The zips are created once someones tries to download a full series of sermons.
You can disable that feature (Series Download) or limit it to a maximum amount of sermons. You can enable or disable it for a specific series in its settings.

Hi Thomas,
I have this problem also and was wondering if I can delete the zips in the back end without causing problems in the front end?

Yep, you can just delete them. They are recreated automatically if needed.
