Support for SermonSpeaker 5.x is in bugfix mode only, the same as it is for Joomla 3.10.
I will not add any new features to this releases.
Please upgrade to SermonSpeaker 6.x and Joomla 4.x, which is better anyway.

I see that in the configuration you select video or audio as a priority. Is is possible to have both video and audio stream versus having to download the file? In other words, the user would be presented with two players.

The layouts shipped with SermonSpeaker don't support it but you can do that in an own layout.
